Food Demo: Watermelon Feta Salad

In June's Food Demo, Amanda-Lynn made a delicious Watermelon-Feta salad. This recipe is the perfect balance of sweet and salty flavours that will pair perfectly with practically any summer meal! It is a great recipe for hot summer days because you don't need to turn the stove on.



Makes: 4 servings


Ingredients:

  • 1 mini seedless watermelon (or half of a full-sized watermelon), remove the rind and chop into 1-inch cubes

  • 1 cucumber, thinly sliced

  • ½ cup crumbled feta

  • 1 Tablespoon lime juice

  • 1 Tablespoon olive oil

  • ½ teaspoon salt

  • 2 Tablespoons chopped mint

Directions:

  1. Combine watermelon and cucumber in a large bowl

  2. Top with feta then drizzle lime juice and olive oil

  3. Season with salt and mint

  4. Serve immediately or place in the fridge for up to two hours (any longer and the watermelon will release too much liquid).
