Renata’s Demo: Trinidad Corn Soup

This month, Renata, the Community Receptionist at The North Grove, shared her recipe for Trinidad Corn Soup during our Food Demo! Warm, hearty, and packed with sweet corn, vegetables, and comforting Caribbean flavours, it’s the perfect soup for a crisp fall day. It’s simple to make at home, too, so give it a try and bring a little warmth to your kitchen this season!



Makes: 4 servings 


Ingredients 

  • 4 ears of fresh corn or 2 cans  

  • 1 clove garlic chopped 

  • 1 celery stalks chopped (leaves minced, stored separately) 

  • 1/2 cup onion chopped 

  • 1 ½ medium carrot sliced into thick cubes 

  • 1/3 cup yellow split peas (lentil) 

  • 1/2 cup red bell peppers diced 

  • 1/2 cup green bell peppers diced 

  • 1 scotch bonnet peppers (optional) to taste 

  • Salt (1/2tsp) & black pepper (1/2tsp) to taste   

  • 1 cup coconut milk 

  • 1 medium sweet potato cubes 

  • 3 medium potatoes cubes 

  • 1 sprig thyme 

  • 1.5 cups + 1/2 cup stock 

  • 4 cups water 

  • 2 leaves cilantro chopped

  • Cilantro (shadow bene or saw leaf) 

  • 1 ½ cup pumpkin cubes or 1 can pumpkin  

  • 1 tablespoon oil 

 

For the dumplings: 

  • 1 cup flour 

  • 1/2 cup water 

  • 1/2 tsp salt optional 

  • 1/2 tsp baking powder 


Instructions 

Water base 

Add oil, onions, garlic and split peas and boil until soft, then blend. (3 cups of water) 


Soup 

  1. Chop 4 ears of corn into pieces about 2 inches long. 

  2. In a deep soup pot, add the corn, stock, 1 cup of water, pumpkin, and blended peas. 

  3. Add the cilantro, thyme, sweet potato, potatoes, peppers, and carrots, along with salt and pepper. Bring to a boil. 

  4. Add the coconut milk, scotch bonnet pepper, and 2 cups of water. Bring to a slow boil. 

  5. Prepare the dumplings by combining the water, flour, baking powder, and salt to form a dough. Form the dumplings by rolling small pieces of dough into balls between your palms. 

  6. Finish the soup by adding the canned corn pieces and dumplings. 

  7. Season with salt, pepper, and pepper sauce to taste. 

  8. Continue to simmer until the dumplings and vegetables are cooked through, about 15 minutes. 

  9. Serve and enjoy!
