From The North Grove Kitchen: Marlee's Holiday Cake

For our Holiday meals, Marlee, our Food Skills Coordinator made a delicious holiday cake with a caramel sauce - and it was a huge hit! This simple cake is very versatile and pairs perfectly with a delicious sauce or icing! The best part? It's simple and cost-effective to make at home! 

Makes: 9 servings


Ingredients

Cake

  • 1.5 cups flour

  • 1 cup white sugar

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tbsp white vinegar

  • 5 tbsp oil

  • 1.5 tsp Vanilla Extract

  • 1 cup Water

Sauce

  • 1/4 cup butter (or margarine)

  • 1 cup brown sugar

  • 1 can evaporated milk

  • 1 tsp vanilla extract

  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350 degrees F.

  2. Grease or parchment paper line an 8"x 8" pan. 

Cake

  1. Add dry ingredients to a large bowl and whisk together well.

  2. Form three small wells in the dry mixture, add the vinegar into one, the oil into another, and the vanilla into the third.

  3. Pour the water over top and whisk together until fully combined. 

  4. Transfer the batter to the prepared pan. Bake for 25-30 minutes, until a toothpick comes out clean.

  5. Remove from oven and let cool for a few minutes before serving.

Sauce

  1. In a medium saucepan, add butter on low heat and stir frequently until melted.

  2. Stir in the sugar until well combined.

  3. Add the evaporated milk, vanilla, and salt. Continue cooking over medium-low heat for 5-10 minutes, stirring constantly, until well combined and slightly thickened. Do not boil.

  4. Serve over the top of the cake and enjoy!
