From The North Grove Kitchen: Rose's Pancit Bihon

Farm & Youth Programs Facilitator, Rose grew up in the Philippines and she recently shared a taste of her home country in our Food Demo program!

Pancit Bihon is a popular Filipino dish made with rice noodles, chicken, and vegetables - typically prepared for celebrations. Try it out yourself by following the recipe below!



Pancit Bihon

Makes: 6 servings


Ingredients

  • 1 package (454g) rice vermicelli noodles

  • 1lb chicken thighs

  • 1 onion

  • 1 red bell pepper

  • 2 carrots

  • 1/2 small cabbage

  • 1 cup snow peas

  • 3 cloves garlic

  • 1 tbsp chicken stock powder

  • 3 cups water

  • 5 tbsp dark soy sauce

  • 1 tbsp oil

  • Salt & pepper to taste


Instructions


1. Cook and slice chicken. Small chop onion and bell pepper. Peel and grate carrot, small chop cabbage, trim snow peas, and mince garlic.


2. Heat oil in a large pot over medium heat, when hot, add vegetables and cook while stirring frequently for 3-5 minutes. Add garlic and chicken, and cook for 2 more minutes.


3. Stir in the water and chicken stock powder, increase heat until just boiling and then reduce to a simmer for 5 minutes, stirring occasionally.


4. Then remove all ingredients except for the liquid and set aside.


5. Add the soy sauce to the pot and mix well. Add the noodles and cook until liquid evaporates completely, about 3-4 minutes. Add more hot water if needed until noodles are fully cooked. Mix veggies and meat back in, cooking for 1-2 minutes.


6. Serve and enjoy!
