From The North Grove kitchen: Strawberry Lemonade Cookies

We had so much fun at our 10th Annual Farm Season Opener, and these cookies were a special part of it! Made with fresh strawberries and a splash of lemonade, these soft and sweet cookies are full of summer flavour. Easy to make, and perfect for sharing! 



Makes: Approximately 24 cookies 


Ingredients 

  • 1 cup unsalted butter, softened 

  • 1 cup granulated sugar 

  • 1/2 cup brown sugar, packed 

  • 2 eggs  

  • 1 tsp vanilla extract 

  • 2 1/2 cups all-purpose flour 

  • 1 tsp baking soda 

  • 1/2 tsp salt 

  • 1 cup fresh strawberries, chopped 

  • 1/4 cup lemonade concentrate (3 tbsp of fresh lemon juice, 1tbsp water, 2 tbsp sugar) 

  • Zest of 1 lemon 

  • 2 tbsp freeze dried strawberry powder (you can buy freeze dried strawberries at the Dollar Store) 

 

Instructions 

  1. Preheat your oven to 350°F. 

  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy with electric mixer. 

  3. Add the eggs one at a time, mixing well after each addition, add then stir in vanilla extract. 

  4. In a separate bowl, whisk together the flour, baking soda, freeze dried strawberries powder and salt. 

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. 

  6. Fold in the chopped strawberries, lemon zest and lemonade concentrate until evenly distributed. 

  7. Drop rounded tablespoons of dough onto ungreased baking sheet, spacing them 2 inches apart. 

  8. Bake for 10-12 minutes or until the edges are lightly golden.  

  9. Let cool on pan for 5 minutes, transfer to wire racks to cool completely.
