From The North Grove Kitchen: Molasses Sandwich Cookies

We had so much fun at our holiday edition of Young Cooks for program alumni! Â
These young bakers took part in either Young Cooks or Farm to Table in 2025. We are so glad we could test these delicious molasses cookies, sandwiched together with tasty cream cheese frosting.Â
Soft and Sweet Molasses CookiesÂ
Makes: Approximately 12 cookies or 6 sandwich cookiesÂ
Ingredients: Â
2 cups flour Â
½ tsp salt Â
½ tsp baking soda Â
¼ cup unsalted butter, at room temperature Â
¼ cup packed dark brown sugar Â
1 large egg Â
1 tsp vanilla extract Â
¼ cup molassesÂ
InstructionsÂ
Preheat oven to 350° F.Â
In a bowl, whisk together the flour, baking soda and salt. Set aside. Â
Cream together the butter and sugar with a hand mixer until light and fluffy. About 5 minutes. Â
Add the egg, vanilla and molasses and mix until combined. Â
Gradually add the dry ingredients to the wet ingredients until just combined. Â
Roll out the dough between two pieces of parchment paper to ½ inch thick for softer and chewier cookies. Roll them thinner for crisper cookies. Â
Cut out with cookie cutter and bake for 8-10 minutes for small cookies, or 12-14 minutes for larger cookies.Â
Cream Cheese FrostingÂ
IngredientsÂ
¼ cup unsalted butter, at room temperatureÂ
½ cup of cream cheese, at room temperatureÂ
1 tsp of vanilla sugarÂ
1/8 tsp saltÂ
2 cups icing sugarÂ
few drops of milk if neededÂ
InstructionsÂ
Using a spoon, combine butter and cream cheese. Mix together until creamy, smooth, and free of lumps.Â
Add the vanilla extract and salt to the mixture, stirring well to combine.Â
Gradually add icing sugar. Continue mixing until frosting is smooth and creamy. If mixture is so thick and hard to combine add a drop of milk. Mix well, adding another drop of milk if needed.Â
Assemble
Spread frosting on one side of the cookie and place another cookie on top creating a cookie sandwich.Â
