A lot of people love cabbage rolls but they take so long to make! Try out this quick and easy Cabbage Roll Soup recipe for that delicious cabbage roll taste without all the work!
Makes: 8 serving
Ingredients:
2 medium sized onions, diced
2 bay leaves (optional)
1 teaspoon dried thyme (optional)
4 cloves garlic OR 1 and ½ teaspoons garlic powder
1 pound medium or lean ground beef
2 teaspoons salt
½ teaspoon pepper
2 medium sized carrots, chopped
4 cups (about ½) green cabbage, core removed and chopped
1-28oz can diced tomatoes and juice
4 to 5 cups water or beef stock
½ cup white rice
1/3 cup brown or green lentils (optional)
1 Tablespoon Worcestershire sauce
1 to 2 Tablespoons brown sugar
2 to 3 Tablespoons white or other vinegar
Optional Garnish:
Dried or fresh parsley or dill
Spoonful of plain yogurt or sour cream
Directions:
1. In a large pot over medium/high heat add onions, bay leaves, thyme, garlic, ground beef, salt and pepper and cook, breaking up the beef with a spoon as it cooks until it browns about 7 mins.
2. Add chopped carrots and cabbage, canned tomatoes, water or stock, rice, lentils (if using), Worcestershire sauce, brown sugar and bring to a boil. Reduce heat to medium/low, cover pot, and allow to simmer for 15 minutes or so just until the rice, lentils and vegetables are cooked. Stir in vinegar and taste and adjust seasoning.
3. Serve hot with a sprinkling of dried or fresh dill or parsley and a spoonful of plain yogurt or sour cream on top if you wish!
